Have you ever eaten something and felt that it has transformed you to another world? There are certain foods I've come across that have an almost culinary orgasmic quality to them. The Castelvetrano olive is the perfect example.

Pop one in your mouth, close your eyes and just slow down to the rich and blissful experience.
This is the kind of olive that will appeal to most palettes because of its mild and inviting flavor.
Castelvetranos are harvested young and cured in a lightly salted brine. The flavor is nutty, buttery and tastes a lot like olive oil.
One of my greater appreciations for this variety is the color: bright green and not artificially colored. I am always fascinated by fruits, vegetables and spices that help add real color to dishes. Beets, carrots, spinach, blueberries and turmeric are the few that I have found to be effective for achieving brilliant hues in both entrees and desserts. I believe that Castelvetrano olives would work wonders in dishes and I have yet to experiment with them in more ways than one!
I must admit however, that looking at the beautiful bright green color, subtle aroma and juicy texture is definitely enough for me to lose my patience for setting up a food shot. I would much rather sit in admiration and slowly eat them.
