
It has been a GOOD weekend. We visited the beautiful Hakone Gardens, spent some time in downtown Saratoga, went on an 8 mile hike and had a nice dinner at my sister's home with a spur-of-the-moment baking session. :)
We made fig bars!!
It was a collaborative project between my brother-in-law, my spouse and myself. The dough was made from Vegan Cookies Invade Your Cookie Jar. The filling was a pre-made family recipe consisting of figs, brandy and a whole lot of nuts!!
For the dough:
2 T ground flax seeds (this is key!)
1/4 cup soy milk
1/2 cup canola oil
3/4 cup cane sugar/Sucanat
1 1/2 t pure vanilla extract
1 3/4 cups whole wheat pastry flour
1/2 t baking powder
1/2 t baking soda
1/2 t salt
Directions:
1. combine flax seeds, soy milk, oil, sugar and vanilla and mix for 1 minute
2. sift in flour, baking powder, baking soda and salt
3. divide into two equal parts
4. roll or shape out one part and line at the bottom of a foiled glass square pan (8x8 inch)
5. layer the filling
6. roll or shape out second part of dough and cover the top of mixture
7. push all contents firmly into the bottom and sides of pan
8. bake for 22 minutes at 350 degrees.
The best part about this recipe is that the top and bottom layer of bars have the consistency of a cookie. The instructions call for "cooling" before cutting, but we absolutely could not resist eating them as they came out of the oven. :)
The result: OUT-OF-THIS-WORLD GOOD!
Fig bars are a really great snack! I plan on making more bar cookies with different fillings. Perhaps strawberry walnut? Or apple cinnamon? Or date almond? Yummmmmmm.

ReplyDeleteWell Done! I make my Vegan Fig Bars with an oat-maple-cashew crust, and for the filling, I just place the figs in just enough water to cover, boil, and then process until the consistency of a paste (but I don't over-process; I like the seeds!).

Thanks for all of your comments! Honestly, I don't have the filling recipe because it was made by my sister a few months back and since then has been in the freezer. However, I can post the fig filling recipe that goes with the cookie recipe from VCIYCJ. Here it is:
ReplyDelete1lb dried figs (cut into small pieces)
2/3 cup water
1/4 cup agave nectar
2 t citrus zest
Combine all ingredients into a saucepan over medium heat. Let simmer for 10 mins while stirring occasionally. When figs are soft, mash pieces into a paste.
And there you have it! Hope this helps. :)
